The Revenge
The Revenge be fashioned from chardonel grapes grown right here on Stillwaters Farm. ‘Tis a light, crisp, dry white wine with just a hint of melon, and a pleasant oakiness from its time aging in an American oak barrel. One taste and ye’ll know why we chose her as our flagship!
The Merry Rose starts with our own chardonel grapes, then we add roses that we grow in our garden next t’ th’ Crow’s Nest, here on th’ farm. This wine is light and floral, without being perfumy. She’s a dry wine with an implied sweetness, takin’ all th’ best parts of the grapes and levelin’ up with th’ floral high notes.
The Wild Rose begins, like her sister The Merry Rose, with our own chardonel grapes, we add roses that we grow in our garden next t’ th’ Crow’s Nest, here on th’ farm. While followin’ the same formulation, once fermentation is complete, this wine diverges from her sister’s path. Merry is light and floral, but the Wild Rose adds a touch o’ sweetness and has a bourbony edge, havin’ spent some time in a bourbon barrel. She’s a semi-dry wine with a light and floral presentation, but she’s got a darker heart.
Bleedin’ Hearts is an enigma–with a difficult to define essence. Dark red cherries and cacao are melded together in th’ winery to create somethin’ truly special. This sweet wine starts with a bold cherry and finishes with dark chocolate on the back of the tongue. Its notes of tobacco and spice, together with the fruit and chocolate, mark this as a guiltless indulgence.
Pieces o’ Eight: Chardonel done a different way. This is the same grape used to produce our Revenge, but instead of oaking, this wine is glass-aged and sweetened. It is a bright pop of grapey goodness, sweet on the tongue without being syrupy. It is very similar to a riesling, but grown in the West Tennessee climate. An excellent “anytime” wine!
Fair Winds is a guest-favorite wine just introduced this year. Our chardonel grapes are fermented with a healthy amount of locally-raised peaches, producing a light, peach-forward wine with chardonel undertones. Great for enjoying a glass pool-side, pairing with a cheese board, or accompanying lighter fare. Semi-dry.
Scurvy Dog has been described as an adventure in the mouth. It is a fruit wine made from Florida key limes and Tennessee-grown cayenne pepper. This wine begins with a fresh citrusy pop of lime, followed by a peppery sensation on the back of the tongue. While not picante, the cayenne definitely wakes up the taste buds! Semi-dry.
The Adventure. A more appropriately-named wine may never have existed! Fresh raspberries and tart hibiscus petals magically ferment into a delightful experience for the tongue, made even more complex by the slight bourbon essence lent from a little time in a bourbon barrel. This wine is soaring to the top of the “asked for” list. As a semi-sweet wine, this bottle would be perfect to conclude a meal.
St. Elmo’s Fire. ‘Tis a wine crafted t’ embody all the characteristics of a nautical phenomenon. Did we achieve our goal? YOU be the judge. This wine combines plump blueberries and succulent blackberries–then tops off the trio with a dose of spearmint, grown here on th’ farm. The berries impart a purple-tinged red, while the spearmint delivers a tingle on the tongue…as close as ye can get t’ lightnin’ in a bottle! An’ the flavor? Let’s just say it’s burstin’ with berryliciousness, and the mint provides a nice wakeup call fer the tastebuds. A uniquely pleasant experience!
